Cinnamon Granola

3 cups old fashioned oats
1/2 cup sunflower seeds
1/2 cup pumpkin seeds
1/2 cup nuts (I used pecan pieces)
1/2 cup unsweetened coconut
1 tablespoon flax seed
1 tsp cinnamon
(Mix dry ingredients)

1/4 cup butter or coconut oil
1/4 cup honey or maple syrup
1/6 cup water
1 tsp vanilla
(Mix wet ingredients)

Combine well and pour into a 9x13 pan. Toast in a 350 degree oven for approximately 30 minutes -- stirring once after 10 minutes and then every 5 minutes until browned. Watch closely for the last 5 minutes because it happens pretty quickly.

Cool and store in an airtight container. Serve with milk or yogurt or add some dried fruit and eat as a snack-y trail mix. The cinnamon MAKES it. So good. I have a hard time controlling myself around this stuff. Enjoy!

  1. Great recipe! I've never used butter before only honey. I will try.

  2. I just made several batches of an almost identical recipe I found on another site. With coconut oil though. Yum! Where do you buy your raw milk?

  3. I would like to try using coconut oil, too. I will do it next time for sure.

I get raw milk through our CSA delivery (www.abundantharvestorganics.com) and it is the BEST. I feel so lucky that we can buy it through them since raw milk has now been pulled from Whole Foods now in CA. (I did recently find another independently owned store that carries it but it's not local to me) The dairy, Organic Pastures, will ship to your home though! Pretty cool.
